{"id":192,"date":"2015-07-01T15:38:54","date_gmt":"2015-07-01T20:38:54","guid":{"rendered":"https:\/\/blog.justmichelle.com\/?p=192"},"modified":"2016-01-05T10:27:08","modified_gmt":"2016-01-05T16:27:08","slug":"patriotic-as-apple-pie","status":"publish","type":"post","link":"https:\/\/blog.justmichelle.com\/?p=192","title":{"rendered":"Patriotic As Apple Pie"},"content":{"rendered":"<p>Except instead of Apple pie it&#8217;s:<\/p>\n<h1>Red, White*, Blue and Chocolate Cake<\/h1>\n<p>nom nom nom<!--more--><\/p>\n<p>Okay, start with a basic cream cake:<\/p>\n<ul>\n<li>1 c butter, softened<\/li>\n<li>2 c sugar<\/li>\n<li>5 eggs, separated<\/li>\n<li>1 t vanilla<\/li>\n<li>2 c flour<\/li>\n<li>1 t baking soda<\/li>\n<li>1 c buttermilk<\/li>\n<\/ul>\n<p>Yes, that&#8217;s an Italian cream cake without the coconut.<\/p>\n<p>Then add the red and the white:<\/p>\n<ul>\n<li>1-2 cups strawberries, cleaned, stemmed and diced (fresh or frozen)<\/li>\n<li>2 T sugar<\/li>\n<\/ul>\n<ul>\n<li>1-2 cups blue berries (fresh or frozen)<\/li>\n<li>2 T flour<\/li>\n<\/ul>\n<p>Prep the berries! \u00a0Sprinkle the sugar on the strawberries and set aside. \u00a0Toss the blue berries in the flour and set aside. \u00a0(These should be in a bowl large enough to hold half a cake batter in addition to the berries.)<\/p>\n<p>Prep 2 9&#8243; round cake pans with some butter and flour and happiness**<\/p>\n<p>Prep the batter like you would an Italian cream cake (without coconut, ofc)<\/p>\n<p>Sift together the flour and soda, set aside.<\/p>\n<p>Cream the butter, add the sugar, beat till fluffy, add the yolks and vanilla and mix until fully incorporated. \u00a0Well, maybe more of a partnership than a corporation. \u00a0There&#8217;s a very funny joke in this about piercing the veil of ownership, and eating the cake here somewhere, but I&#8217;ve decided this may not be the best venue for it. \u00a0Feel free to comment if you think of it.<\/p>\n<p>Mix in the flour and buttermilk, doing that whole a little of this and a little of that until it&#8217;s all mixed in nice and well. \u00a0Set aside.<\/p>\n<p>Beat the egg whites (you didn&#8217;t forget about them did you?) until they reach stiff peaks. \u00a0If you&#8217;re like me and only have one bowl for your mixer (because a second costs $50), that means you&#8217;ve had to put the regular batter in a separate bowl and thoroughly washed your mixer bowl because, egg whites.<\/p>\n<p>Anyway, fold the batter into the egg whites together.<\/p>\n<p>Pour half of the batter over your strawberries and half over your blue berries. \u00a0Fold each until there&#8217;s fewer clumps of berries at the bottom.<\/p>\n<p>Now this is very important. \u00a0Put the strawberry batter in one cake pan and blueberry batter in the other. \u00a0If you don&#8217;t and, say blend the two together, you end up with a purple cake. \u00a0Which is a whole &#8216;nother type of pride than\u00a0patriotic pride.<\/p>\n<p>Bake at 350 until done (25-40 minutes).<\/p>\n<p>Remove, cool in pan for 10 minutes then turn out on a rack and cool completely.<\/p>\n<p>Frosting TIME!<\/p>\n<p>FROSTING time?<\/p>\n<p>Whatever.<\/p>\n<ul>\n<li>1 c cream cheese<\/li>\n<li>1 c butter<\/li>\n<li>1\/2 c unsweetened cocoa (sifted)<\/li>\n<li>3 c powdered sugar<\/li>\n<li>1 t vanilla<\/li>\n<li>1-3 T milk (depending on humidity)<\/li>\n<\/ul>\n<p>Cream the cream cheese and the butter together until you secretly just want to take it in another room with a spoon. \u00a0I won&#8217;t tell anyone. \u00a0Slowly add in the sugar and cocoa and mix on low until the air around the bowl stops tasting like sugar. \u00a0Add vanilla and a little milk at a time while whipping the frosting together. \u00a0Start with 1 T and if the mixer is having difficulty add 1\/2 T more until it doesn&#8217;t. \u00a0You may not need any depending on the humidity and your taste.<\/p>\n<p>Place one layer of the cooled cake on what you want to serve the cake from. \u00a0Glob some frosting on it, and spread it out. \u00a0Place the other layer on top, and glob the rest of the frosting on top and spread it over the top and down the sides.<\/p>\n<p>Remember, crumbs in your frosting means it was made with love. \u00a0All those crazy robots who can frost a cake without getting noticeable crumbs in the frosting don&#8217;t add love.<\/p>\n<p>*White is debatable. \u00a0You might end up with some if you use fresh fruit, but frozen fruit will inevitably get their juices all over their cake layer. \u00a0Which is also good. \u00a0I mean what&#8217;s the point of white on the flag?
